You may have a dodgy processor, it may be getting too hot, my sis-in-law's did this, we cleaned out the inside of her PC with a compressed air cannister and then bought her a more powerful heatsink fan which you can grab off eBay for next to nothing.

-If it solely does it playing heavier 3D games then yes the graphics card shuld be suspected.
If you don't have freezes in other 3D games, then try re-installing (but odd though that both FSs are affected)
If you have crashes just running Windows, then something else is afoot (Watson)

I am having problems with running either FS2004 or FSX (or indeed any game) for more than 15 mins sometimes less. It starts OK then suddenly my PC freezes up and the only thing that I can do is turn off the power and switch it back on again. It only started last couple of days and is getting worse. Do you think my graphics card (356MB Running of 2GB RAM and a 3400MHX processor) is goosed and if so how can I check it out. I have upgraded the Nvidia drivers.
