-There are several ways to build a multi monitor set up but I'm assuming you want to display standard FS2004 or FSX screens on all three screens rather than 3rd party nav software or instruments.
Wideview (http://www.wideview.it) is software for linking multiple FS PCs over a network to enable a system with multi monitors. Because you are using more than one PC you can have more monitors and better performance than the limitations of one PC, though unless you happen to have two PCs capable of running flight sim it's an expensive solution !
To connect three monitors to one PC the best solution is Matrox's Triple Head 2 Go (http://www.matrox.com/graphics/en/gxm/products/th2go/) which is a hardware solution allowing three monitors on one PC.
Hope this helps !
Cheers,
Bruce
