Le Touquet is fine if you are based in the SE corner of the UK and don't really like flying much. It does have the advantage that you can walk into town easily.
Cherbourg has lots more to recommend it. For instance, this weekend I arrived Friday morning, left on Monday morning and paid less than 10 Euro for landing and parking.
On site there is a bar/restaurant/bookshop/wine merchants run by a lovely couple, Luc and Edith, both of whom are fluent English speakers and very pro light aviation.
Full ATC with very little to do as there are no scheduled flights, and just the odd charter flight mingling with the GA
And of course, whilst you are there a flight down the Normandy Beaches is really rewarding. The remains of the Mulberry at Arromanches, the shell-cratered headland at Pointe Du Hoc, and the US Cemetery behind Omaha beach all show up well from the air.
